I thought I would kick off this section with a good old fashioned book review.
This book is worth every penny. Lots of great curing and smoking ideas. Plus plenty of easier recipes to try first, like salami! Next up for me will be a crack at bresaola! Cured beef slices!
It also gives you the low-down on all of the gear that you might need. Although some of the suggestions can be taken with a pinch of salt. Ahem!
